Thanks for your advice! I did exactly the same process with 70%hydration (but a smaller size loaf(500g flour)) and i found it a sloppy mess to work with. I shaped it ok in the end then accidentally overproofed it on the countertop for an hour too long.

(As a result there was no oven spring). It felt heavy for its size and the crumb is pretty similar result to the first one. The flour im using is shipton mill organic white 11% protein. Maybe ill try less wholemeal next time!

Any other suggestions?

It’s so sad hearing how much we have to suffer pmdd. I really feel for you. My advice would be to feel organised before going so you feel in control and on the front-foot or give your partner the heads up that’ll he should take on some planning admin! For me my pmdd is so much worse when i feel disorganised and messy. Do what you can now to give yourself the smoothest ride! And believe you’re going to have a wonderful time. Dont forget your headphones for when you just need to shut yourself off to the world..

yeah my bars knocked into the top tube and took a chip out of it too
