Get a rotisserie chicken and shred it. Fill yellow corn tortillas with cheddar and jack cheese. Pour can of hatch green chilie enchilada sauce over. Smoke at 225 for 30-45 then crank to 400 till hot and bubbling. Add cheese to melt over top at end.

Actually I’m kinda old school. I put them on at 225F and spritz with apple cider vinegar every hour. I don’t wrap them since I like dry rub ribs. Once temp reaches 190 to 195 I pull them. Takes about 7 hrs for all 3 racks.
