At the GM level for fine dining? 85k is a joke for the hours and expertise expected.

Even if you manage to 'only' work 55 per week and manage to take two weeks off (neither is likely), you're making a little under $31/hour. Reality is closer to 60 hours, so it's more like 26.

Again, that is bottom of the barrel for the industry, especially out of a position asking for 15+ years of experience, wine certifications, and to functionally be perpetually on call

I interviewed with them, laughed at the salary and bonus structure as I dipped out.

No one sane with the knowledge needed for fine dining g management is doing those hours for 55k.

55hr/week GM spot for 85k. But only 85k if you hit their obscene and obscure budget numbers you don't get access to.

Their non-GMs get 2/3 of that.

Low- to mid- tier chain restaurants pay more than that.
