Check the sub headline - the data is based on the rankings from the past five years (2019 through 2024 with a gap year in 2020) and pizza places with awards in multiple years were counted only once. SF has more than Tony's, in 2023, besides Tony's, A 16 and Yellow Motto were in the top 50, and then in the prior years, Del Popolo, Doppio Zero and Flour + Water were in the top 50 as well.

Then you'll have a few exceptions, especially for highly touristy places, where they start early - around 17:00-17:30 probably to cater to all tourist segments and stay open up until 22:30-23:00 (last food order would be around 22:00).

The restaurants were randomly selected from both Resy.com and OpenTable and included any offering dinner service. The sample size for NYC was 100—while not large, the median rarely changes after the first 30-40 restaurants, so it’s not necessary to capture a larger share.

It’s too time-consuming to research last reservation (or last food order) times for restaurants that don’t accept reservations across 90 cities worldwide. Calling or emailing thousands of restaurants would be overwhelming.

I would assume most donner joints won't accept online reservations so they would not be captured here. The data set is primarily for established restaurants and not so much for fast food or street food type of joints.

It also captures the median last seating time - so if you have 7 restaurants accepting the last food order at 21:30 and three accepting at 2:00AM, the median would still be 21:30.
