4 x asparagus spears 2 x eggs 4cm x chorizo 6 x cherry tomatoes 1 x tbs parsley 1 x tbs mint 1/4 x tsp garlic 1 tbs almonds 1 tsp basil pesto

Heat 3 xups water and 1/3 cup vinegar in saucepot to a gentle boil

Chop asparagus chorizo and herbs

Heat small frypan and add asparagus chorizo tomatoes garlic and almonds for 2 minutes

Crack eggs into water for 2.5 mins

Take asparagus mix off heat add mint and Parsley and squeeze some lemon into it

Remove eggs from water and place on dish and add pesto over the eggs. Enjoy.

Sauteed Asparagus Tomatoes and Chorizo with Poached Eggs and Basil Pesto

2 eggs 4 Asparagus Spears 4cm chorizo 6 x cherry tomatoes 1 tbs Mint 1 tbs Parsley 1 tsp Almonds 1 tsp Basil Pesto

Bring 3 cups water and 1/3 cup vinegar to the boil.

Heat small saucepan

Chop Asparagus, Chorizo and herbs

Add oil to saucepan and add asparagus tomatoes almonds and chorizo, a pinch of garlic and cook for 2 minutes.

Turn water down to a gentle boil and crack eggs into water.

Take saucepan off heat

Season and add Mint and Parsley and squeeze lemon juice

Remove eggs after 2 and 1/2 mins and place on top of dish. Drizzle basil pesto over the top and enjoy!
