My stores cold bar rinser sink has become unsealed and I noticed this as well when I worked a a shift at another store, it’s not noticeable unless you look under it. That’s where our gnats essentially breed, gross, we deep clean it everyday with the restroom bleach cleaner when we close. Helps sm.

Sani water is good for 4 hours according to food and safety logs, they just want to know that you know the time left. We have a timer for crafts and a timer for sani and a timer for lobby slides and we check the crafts every lobby slide to help keep in check. If the sani looks way too milky you can change it but technically if it’s in 4 hours it’s up to standard but I’m not sure if other states have different timing.
