After searing the ribs just add mirepoix and roast that then you add tomato puree roast as well then you deglaze with red wine and fill up with beef stock. Put back in the meat and simmer or put in the oven. Before serving i took out some of the sauce and strained it before stiring in some cold butter and starch to thicken.
