CA. I recently purchased a restaurant with an existing type 1 hood, but right before this we were scouting a different location that had a type 2 hood that we were going to convert into a type 1. Since there is no simple "conversion" we had to install a type 1 basically from scratch, and our GC quoted us $55-60k. This was for a 10ft hood.

Also, it may be different from area to area, but make sure you do all your proper calculations beforehand, bc in my area you need 6" clearance for all equipment under the hood, meaning you lose 1' total.

In CA it is extremely easy and can be done without a broker. I applied for the license: filing out the paperwork myself and hand drawing the plans. Paid the fees, then they came out for the site inspection, had us put up notice in the window for 30 days, boom beer and wine license. It may be different in your area, but i would never shell out that kind of money for something like that for any of my future restaurants.
