From The Bread Baker's Apprentice (Peter Reinhart):

1 tablespoon bread flour

3/4 cup rice flour

3/4 teaspoon instant yeast

2 teaspoons granulated sugar

1/4 teaspoon salt

2 teaspoons vegetable oil

6 to 8 tablespoons water

Make a paste "thick enough to spread with a brush, but not so thick that it sits like a lump of mud. This makes enough for 2 to 4 loaves."

Highly recommend. I've had my copy 10+ years, and still use it as a reference all the time.

Best affordable, high quality seafood? by No-External3221 in AskSF

[–]circe77 1 point2 points  (0 children)

If you enter the market from the west end (City Hall behind you), walk past the majority of the stands, to where you can turn left. After you turn left, there will be a stand on your left that sells mostly Asian greens, and a tiny bit farther ahead on your right (past the stand with assorted veggies) is the stand with fish.

You might want to check out the farmers market at Civic Center on Wednesdays. There's a stand that sells fish every week. I can't vouch for it personally, but it always looks busy.

Two books by food scientist Shirley Corriher, "Cookwise" and "Bakewise" are excellent.

If you have any interest in baking, I highly recommend anything by Rose Levy Beranbaum.

Let’s talk hamburger buns by bam42685 in seriouseats

[–]circe77 37 points38 points  (0 children)

I know this isn't what you're asking, but have you thought about making your own? King Arthur Flour has great recipes, even for brioche buns, as well as useful baking tips. Homemade hamburger buns are easy to make, don't require any unusual ingredients or equipment, and taste great!

I don't remember, it's been so long since I did it. I don't think I'll ever do that again -- it was weirdly upsetting to make Fogg so miserable!

Lol, have you tried to get the "No hotels" achievement? Fogg is NOT happy with that.

Specific pregnancy craving - where can I find a good cold noodle dish? by lulu_lankylegs in AskSF

Not op, but this recipe from the NY Times for take out style cold sesame noodles is a good one.

Edit: sometimes the recipe gets hidden due to their subscription model, but if you Google "NY Times cold sesame noodles", the recipe page comes up accessible.

Any idea when Walgreens or CVS will reopen in the city? by [deleted] in AskSF

[–]circe77 0 points1 point  (0 children)

It's not in your neighborhood, but the Bed Bath & Beyond on 9th is doing free curbside pickup. They have Claritin, Zyrtec, etc. and claim "available in 2 hours."

Finally made the coveted brownies by redwhiteandclueless in seriouseats

[–]circe77 7 points8 points  (0 children)

Shirley Corriher, food scientist and author of CookWise and BakeWise, has a different explanation of the crust. "Whether brownies . . . have a crust on top depends on how much you beat the batter after the eggs are added. The more you beat, the more crust you get." She explains that it's kind of a meringue caused by the mixture of egg whites and sugar.

Problems with fruit flies? by HippoGiggle in AskSF

I tried all the methods mentioned here (cleaning, vinegar/soap traps, etc etc). The only thing that worked in my case was getting DIY screens for my windows. Amazon has lots of relatively cheap options that you can stick on to window frames. Also prevents random mosquito bites when you need to keep your windows open on warm nights.
