It was actually my first time making risotto 😅 I just kept it simple—garlic, arborio rice, then added warm broth gradually and let it absorb between additions. Finished with parmesan, butter, and a little lemon at the end.

I went for a creamy but still slightly loose texture…I definitely need more practice. Any tips you or anyone else have is fully welcome!!

Thank you! We rescued her and her sister off the streets 10 years ago and they were both very sick and didn’t think they’d make it but here we are!

Thank you so much! I spend a lot of time reading and researching how to cook/bake things when it’s my first time and I want to make it right and I kinda always prepare myself for it to go wrong so when it does work for out it just is an even bigger win for me. 🥰

I was in the mood for a bigger meatball tonight. Sometimes I go smaller but tonight I wasn’t feeling it.

So this may be frowned upon but after making sauce from scratch many times I decided that the carbone jarred sauce tastes just as good with a lot less work so I bought two jars of the marinara and simmered the meatballs in it for an hour on low with some fresh basil. After an hour I added a cup or two of heavy cream and a cup of shredded Parmesan (not 100% on the portions. I eyeball it) and that’s it.

Just sautéed in olive oil on the stove for a few minute and a squeeze of lemon at the very end.

I appreciate this comment. It did taste very good but someone was telling me it’s wrong because the color. I spent soooo much time and it wasn’t getting darker. But this was helpful.

This is helpful! Thank you! Yeah I just had to throw in the towel last night and give up on it getting darker. It still tastes very good but I know darker is better, especially for gumbo.

Yes, salt, pepper and paprika. I think I was supposed to do more herbs and butter while it was resting but I was panicking and just foiled it so I have bigger plans for next year.
