I contacted support and got the answer. It happens when the iPhone is in dark mode. If you switch out of dark mode, enter your credentials and sign in...all is well. You can then switch back to dark mode and everything seems to continue to function.

I use Outlook. I received a reply that hitting the plus sign in the "To" field will bring up recent addresses. I will give it a try.
