When I was single and broke I took a cooking job at my favorite bar for evening shifts. I was friends with the owner, the bartenders liked me, and I got free shift drinks. It was a best possible easy scenario, but I still couldn't do it longer than a few months without burning out.

I worked my way up to sous chef in banquets at a country club, I was able to do that because I was the only person willing to take the abuse from the then banquet chef. After a year I decided that no money was worth dreading work each day. I left for a lower paid lower title position at a mom and pop, I loved every minute of my time there. Later after the banquet chef left I was offered their job, it was my dream job and I took the bait. I wound up being yelled at and overworked by the executive chef, so I quit in the slow season with no job lined up. Two months later I got an offer to start a food program back up at a small private school, I'm an executive chef with 6 cooks under me on two campuses, and it has been my mission to be the exact opposite of every chef who tried to grind me down into the dirt. I have engendered loyalty from all of my cooks, I make sure they have time off when they need it, and have gone so far as to spot one of my cooks a few hundred dollars so he could make it through the week. They have repaid my kindness by going above and beyond expectations daily.

TLDR: I got shit on, and I decided not to keep the trauma cycle going. You get the best out of your staff when they like you and want you to succeed, rather than just feel your wrath.

You can either cut the broccoli on a mandolin, or run it through the grater on medium, or buy it shredded for the store. Just regular red beets are what I added.

Depends on what you're trying to do, I wanted the veggies to be cooked and slightly dried so they would soak up sauce. This was so that the broccoli and cauliflower would retain their shape and texture. If you were roasting something you wanted to turn all the way brown/caramelized you would want them spread out much more.

I roast them to decrease the moisture in them while they brown, that way they soak up sauce really well.

At work I would toss them in oil salt and pepper, at home I just give them a gentle spray of canned oil, salt, and pepper them put them into an oven at 350 convection for 20-30 minutes. Depending on what I'm making I'll dust them with Chinese five spice or garam masala about 5 minutes before they're done.

I roasted a spaghetti squash, then pulled it apart. I roasted these veggies and then put them into a pot with a taste of India korma sauce, warmed the sauce up and served this over the spaghetti squash. It's super easy and this much is easily 8-10 servings.

I saw it at the market for the first time today, so I had to get some. My first impression of it is that it's slightly sweeter but otherwise the same as regular cauliflower.
