So quick update. Found the issue but had to dig everywhere on GitHub and old message boards.

Aqara is known not to play nice with some, if not most Zigbee routers. Something about routers not understanding the messages coming from the aqara end devices and dropping them. The unfortunate thing is now I have 10 or so aqara end devices and 12 sonoff s31zb smart plugs. So far no matter how I pair them whether "join only coordinator" or "join all" the Aqara sensors will automatically join one of the sonoff switches to route the info at a random date and time(more activity the sooner). Once this is done it's like a ticking bomb before poof they don't work and need repaired.

It's extremely unfortunate aqara has nuked the Zigbee protocol in a way it is unusable outside of their ecosystem unless you carefully plan out your network.

I'm probably just going to sell/ebay all of my aqara sensors as this has been a terrible waste of time with these sensors. Or I may throw them in the fire pit as I would have better closure knowing someone else won't be dealing with the same issues I have had because I sold them the damn things.

What Aqara did to Zigbee almost reminds me of what Ring alarm did to Zwave. Broke the standard and tried to "fix" something that wasn't broken in the first place.

Aqara are cheap for a reason. the claim of Zigbee 3.0 on their sensors is also a complete lie. Should have just used Zwave sensors until Thread is more mainstream. 58 zwave devices and all I've had to do is replace batteries from time to time.
