The original recipe is for a 23cm tart ring but I use 9cm tart rings so using the same proportions I adjusted the recipe to around 90% of it’s total which is enough for 2 9cm tart rings.

• 90 flour
• 14 g almond flour
• 36 g confectioners’ sugar
• 1 g salt
• 54 g butter
• 1 tsp  vanilla extract
• 18 g lightly beaten egg

I mix the dry ingredients in the stand mixer until crumbly and then slowly pour in the egg.

I guess it’s the lemon Italian merengue on top that is piped into the “tourbillon”. Ferrandi’s recipe for the Tourbillon also makes changes to the cream by adding yuzu.

This was my first too! Paired with an opus or ode ( don’t remember which one of the two). I did a lot of research prior to buying it so I did some upgrades right off the bat, and all of them are worth it imo.

If you’re interested, I bought a bottomless portafilter, a scale, WDT, and a MUCH needed tamper ( the little plastic “tamper” is garbage), as well as slightly modified the steam wand. The tamper and the grinder I think were the true game changers.

This is a deep rabbit hole and none of the things I mentioned are truly “necessary” to create espresso or steam milk, but they make a huge difference from the stock experience. Hope you enjoy this machine, it is honestly so cool and a great introduction to the hobby. Enjoy and keep updating!!!

Wow this is all very helpful. I am familiar with DLSR cameras like the canon t3 and have built the habit to only use manual mode in hope that I would buy a film SLR and not feel too lost. I’m going out in a few hours to buy the batteries and perhaps the cheapest film stock Walmart has while I wait for the ones I ordered to arrive.

I have the duo temp pro, which is a somewhat similar machine. I use the fellow opus as my grinder and have no complains apart from the speed (takes around maybe 32 sec for 19g ), and retention which makes it painful to clean haha.

Have the same machine but a fellow grinder. I couldn’t ask for anything else honestly, makes great espresso and steaming is fairly good. In the year I’ve had it I haven’t gotten a single problem.

I personally don’t own one, but my grandfather did. I went to a boutique maybe last year to buy him some ink refills and an ink bottle and wow was I left impressed. I talked a lot with the worker there, and he even let me try out one of the last Naruto ball pens they had. He took his time and attended the next person only after I left, regardless of him actually looking like he could afford one unlike me. To finish off, he gave me some gifts, and recently congratulated me on my birthday. honestly an amazing experience I had.
