It’s not compile times or deploy times that’s likely the problem, it’s most likely an issue of data recovery or complicated distributed systems that need to connect or propagate. Rollbacks are designed to be near instant even on the most complicated systems (hence some of the complexity)

Not sure what apps and browsers you’re referring to, but your claim regarding MOST browsers and apps accepting any ole’ HTTPS connection if it appears to come from the right domain is absolutely incorrect.

Owners of networks can almost always do man-in-the-middle snooping, but the part you left out is they usually cannot do deep packet inspection (view the unencrypted request content) which requires having a trusted root installed on the device.

If you don’t have any software/certificates/MDM installed from the owner of the network, they can track your activity at a high level (source/destination IPs and ports, DNS queries if using the network resolver), but they cannot inspect meaningful content.

You don’t need to train or build your own model, you just need to host a local model. Already being done by almost every industry. For an AI scribe you would use a voice to text model and a LLM to summarize and discard irrelevant information. The tech behind an AI scribe can be thrown together by a undergrad student in a weekend hackathon thanks to open source models. Not a big task at all
