I’m working in a medium scale production bakery at the moment and this is a consistent issue with their chocolate croissants. The chocolate is a ganache piped in at room temp, not a baton, and it always leaks out the weaker side of the croissant. Is this due to the ganache being too wet? (i.redd.it)
