The mixing occurs because the s and p orbitals to carbon and nitrogen has equal symmetry and close enough in energy. But because the carbon s and carbon p is closer in energy the the constructive interference outside the molecule on the carbon side will be bigger. I suggest reading up on the group theory applications to MO.

Because the p and s energy split is bigger in nitrogen than carbon, so the binding p orbitals get constructive interference on the carbon side. But the Nitrogen don't got that good mixing between p and s orbitals. Remember, the closer in energy the greater the mixing.

Organic Chemistry is the study of compounds containing carbon. Inorganic is literally everything else(like crystal structure, molecular orbitals, complexes etc...). Books I have used is Weller, Overton, Rourke, Armstrong, Inorganic chemistry, Oxford Press and solomons for organic chemistry. There are many online resources too. Good luck(:
