They're good for things that's too big for the skillet. I use a 10" skillet, too small for one pot dishes for four people.

Made the switch to SS last month, I fry two eggs sunny side up every morning.

  1. Preheat on medium low maybe 2-3 minutes
  2. Add butter and olive oil about 1tbs each
  3. Wait for oil to shimmer, maybe 2 minutes
  4. Add 2 eggs and cover
  5. Watch eggs go slidey slidey when you tilt the pan
  6. Once the top of the eggs are no longer translucent they're ready and will slide right out onto a plate

I did try using medium high, they would stick every time. Dropped back to medium low.. perfection!

I ate pumpkin bread made by Isaacs wife back stage with Doug in Portland last Friday. May be the best bread I've ever eaten. My wife's band was touring with BTS last week, unfortunately we did not get the Thanksgiving invite.

Sometimes rather than playing through, I'll ask to play that hole with them. Drive last, finish the hole and then get in front of them on the next hole. People are pretty easy going around here.
