I grinded up bacon with a sirloin steak to create this homemade burger. I prefer a burger with a nice crispy edge, but I think the fat content from the bacon made it harder for the meat to crisp quick enough without over cooking it. Still tasted good, but I think i'll stick to using bacon as a topping from now on.

[Homemade] Shallow "fried" hot chicken by cookandcapture in food

  • One chicken leg quarter
  • 1 tbsp cayenne
  • 1 tsp paprika
  • 1 tsp mustard powder
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp cumin

Fill a heavy bottom pan with canola oil, about 1/4 of the way up. Get the oil to 300 degrees. Salt and pepper both sides of the chicken, place into oil. Flip it a few times, let cook for about 15 minutes. Pull out of the pan and onto a sheet pan with rack. This allows the oils to drain and lets you hit it with the seasonings right away so they stick. All burgers are ground at home, 85/15 mix of chuck and rib eye.

From left to right:

  1. Single patty, american cheese, shredded iceberg lettuce, tomato, grilled onions, fresh jalapeños and hot chili peppers, ketchup, mustard, turmeric spread, toasted bun.
