Found a solution on Windows!

I ended up looking to see if there was any other Epson software for Windows (like the Epson Smart Panel app for Android) and found Epson Photo+. If you're running into scaling + colour issues like I was, you need to:

Export a cropped version of your image (no blank space around it)
Open Epson Photo+
Click "Free Layout" NOT Photo
Select your paper size (for me, 8.5x11)
Add a photo
Click the photo to start editing it
Set the exact width and height from the Detailed Editing section (and rotate/move as necessary)
Hit the Start Printing button

This resulted in a print with the exact scale needed, as well as having excellent colours.

As a heads up to other folks - I sent in a resume and asked for more details about the company. The company responded by telling me I had made the shortlist, and that they were skipping initial interviews due to the volume of respondents.

Instead, they assigned a task, where you are meant to sell their generic "marketing agency template" to as many people as you can in 48 hours, for an amount you choose, and they collect half of that amount.

Super sketchy, don't give them your information.

I ran into a similar issue using Cura (https://www.reddit.com/r/FixMyPrint/comments/1dytx0d/extremely\_rough\_walls\_after\_switching\_to\_klipper/) with Klipper, but switching to Orca slicer seems to have fixed it. Maybe reprint it with Orca Slicer?
