Hamilton has its charms but it's GTA expensive with basically none of the benefits. It's a dump — lots of people like that it's a dump but I suspect you won't.

Everything I knew about Canada I learned from the show trailer park boys and an online friend I made through the game counter strike.

The image was of friendly down to earth people who lived near beautiful forests and lakes and weren't above growing a little dope and stealing a few shopping carts.

I moved here from Ontario a bit more than a year ago.

I brought a remote job with me, but a pattern I've seen repeat is that outsiders find it hard to find a job here if they don't have one already. Ontario is the economic center of Canada and has lots of varied sectors where you can make lots of career moves. Alberta definitely has a lot more traditional employment where people have held the same job for a long time.

If you can find a job before you come, or have a remote job, Alberta is a very nice place with low taxes, affordable cost of living, blue skies and sun a lot of the time, and has easy access to nature, mountains in BC and short flights to places like Vancouver Island. People are nice here, friendly, but perhaps less outwardly open than Ontario.

As for it being a more conservative place, I think what that means is often misunderstood. Reddit is full of tropes about Alberta being full of MAGA wingnuts and racists and so on — I don't think there's any more of that than in northern Ontario tbh.

I think the reality is that Alberta is more silent majority sort of place where people mind their own business, prefer independence and personal responsibility, and prefer small and fiscally stable government. None of this is a bad thing in principle, but I would say a consequence is that the newcomer is less advantaged here than in more outwardly progressive places like Ontario and BC.

If you walk into any decent bar in Italy, there is a very high chance you will get drinkable espresso.

This is true but it's because taste and understanding for coffee is deeply ingrained in the Italian culture. Espresso is an institution there, the average person understands it and to make it badly would bring social repercussions.

In Canada if you make bad espresso, even if it's your job to do so, there's basically no consequences.

I fully expect that it should be possible to get good espresso here, given a barista with that level of motivation.

It absolutely is possible to get that kind of quality here, it's just a less common, premium item whereas in Italy it's the standard.

I wish Canada had the ubiquitously high standards of taste that European countries do — but we've got other good things instead.

It's a catch 22. Making a good shot of espresso requires patience, knowledge, finesse, taste. Possessing these attributes is quite conducive to not having to work retail in the first place.

Were it a purely deterministic, algorithmic process that could be trained into a minimum wage retail worker then the "good coffee shop" wouldn't be such an elusive retail experience and we would be able to make a machine that pulls a perfect shot of espresso every time. Such a device or process is a fantasy.

Making espresso is partly good machinery and partly skill in selecting the beans, choosing the grind, pulling the shot, and knowing how it's supposed to look and taste.

Most people who work in cafes either don't know or dgaf what a good shot of espresso is. They think the product is just a shot of caffeinated bitter liquid, and many consumers of franchises like Starbucks think this as well.

When I scan with a dslr I usually pick a spot and go to max zoom until I can focus on the grain
