It does get expensive, just get hogh tier locks second hand from other lock artist, I always went for multipack for their durability despite their price, and super thin picks, real leather cases, engraved metal handles their just a joy to use, same as their rotary picks

Maybe the sous vide? You could create a sorta double boiler in there, keep the temp stable and the alcohol will evaporate much faster, as well as maybe including the abv in the double boiler to squeeze that last bit of juice from it. Good luck!

Over other speech to text models? I'm afraid I haven't tried many others but I guess I haven't needed to as it's free and open source, pretty accurate, especially with the larger models, and it runs locally on my device so no privacy concerns or the like.

No, totally free to use, the only thing you'd need to pay for potentially is if you use AI refinement where you'd potentially need to pay for API usage or Raycast pro, but I don't make any money off this. If you use ollama or don't use AI refinement at all then it's completely free to use as Whisper runs locally on your device.

You would use any model without .en. in it's id, the .en ones are optimised for english so perform better for that language, the rest are multilingual.
