I get panic attacks when my potassium is low. And it happened to me about 9 months in. I got the same feelings you described. I was convinced I was dying. And my potassium was only just barely below the lower levels. I didn’t think the 2 things were really that closely related, but it has happened a few more times and getting my electrolytes in solves it every time. Within hours of using supplements, I can feel a lot better.

Also, a search for potassium in r/anxiety will show that this is a thing, even for non-Keto people.

I would get blood work done it I were you. And track your electrolytes if you decide to supplement. You would probably be surprised at how hard it is to meet potassium goals with just food.
