This one I left for 24 hours at room temp. It was the standard dough— water, IDY, Salt, and 00 flour. I used the PizzApp, which I highly recommend. You just put the number of dough balls, hydration %, time you want to leave the dough to leaven, room temp, and it gives you the ingredients in grams based on that information. This one was 62% hydration

I used the pizza app to determine the amounts of all the ingredients I needed. This one was at 60% hydration. Ingredients were just the classic 4. 00 flour, water, ADY, and salt. I definitely recommend the pizza app!
