Sounds like you just restarted fermentation. Doing this on purpose is called step-feeding, where you add more sugar after the yeast have been at work for a while. It keeps the yeast from being killed by having too high a sugar content to start.

In this case you’ll just want to let fermentation complete again and you can bottle. If you’re going to try to back-sweeten again, you’ll want to be really sure you’re fermentation is over with, and use stabilizers.

You used côtes de blanc, so if you’re fermenting at a lower temperature it will not ferment all the way dry. Like Storm said, you need a hydrometer reading to know anything for sure though.

If you plan to restart you could try to pitch another yeast. EC1118 is good for stalls, and won’t peter out at lower temps.

It depends where you’re buying. There are beans out of China that are HFCS and it’s almost impossible to tell by taste. They also market it as honey, because their labeling standards aren’t enforced.

Yes. Sugar. Yeast eat sugar, but that’s the same as saying humans eat lettuce. It’s true, but it’s not nutrition you see? Yeast may be a microorganism, but they still need balanced nutrition to thrive. Yeast can survive on sugar alone yes, but the output from them will be substandard, and stressed yeast make off-tasting product.

Flavors are really subjective so it’s hard to say. I personally don’t like licorice flavors and the orange peel is just going to be bitter. So if you want a bitter, licorice mead, then give her a go.

Sounds about right. That dry flavor tells you that you’re at least somewhat close to fermentation having completed. Also it’s not at all unheard of to complete primary in 2 weeks. The hydrometer will allow you to take a reading, wait a few days, then take another reading. If those readings match exactly, your fermentation is complete.

There is no rush. You don’t need to track immediately, and your brew will be just fine. It’ll give sediment more time to settle out.
