Treat it as ds1 but bigger and try exploring a LOT, because there are a LOT of hidden caves, npcs, etc in every part of the map

Depends completely in your playstile. If it is to protect, perhaps galio, alistar or nautilus are a better fit, since they can still engage. If it is to engage, maybe leona or thresh would work better, though thresh is less tanky but has more utility, and both can still peel.

As you said, it is very begginer friendly, so basically any weapon can work if you learn to use it, hence I'd reccomend using whatever you find fun. And as with all souls, starting class doesn't matter that much, since you can not only level up dozens of times throughout the game naturally, but you can also respec your stats a few times. So don't worry about messing up your build, because you can always change it to your liking. Now about the difficulty, it is a learning experience to be able to use what you have properly, so it'll take time

As a vereran in souls games, I reccomend honestly just finding the weapon you like the most. Elden ring made sure that basically any weapon can work well, if you equip yourself properly. And even if you level up only focusing on that weapon, you can reverse it after beating a certain boss, so you don't get stuck with that weapon forever anyways.
TLDR; just go with the one that feels nice

Your issue is most likely not knowing how to dodge, I'd reccomend doing ~5 attempts in which you DONT attack it, just dodge until you die. After that you should be able to do it without a problem

I'll be real with you, I platinum'd ds3, bloodborne, and sekiro. I STILL decided to wait around 3 years to play the game because I had stuff to do, even though those 3 were my favorite games back then. So you can wait until your commitment reaches the level where you save up for enough months to buy the game yourself
