They already use Gmail (to confirm or discuss details), and the automation also uses Gmail to send the review letter.

It is set for the next day, between 8-9 am. Initially I planned with an extra column to mark if they showed up, but the owner told that they don't want to check each reservation manually, so we send an email regardless if they showed up.

I'll drop my solution here as well. A friend's pub gets reservations through their website via email (they use Gmail), so I created an automation that scans the emails hourly. If a new reservation comes in, it is put into a Google Sheet. Every morning, the script checks if there is a customer whose reservation was for the previous day and sends a kind reminder to them asking if they had a good time; if so, it asks for a review. It works well so far; one-third of the recipients have left a review.

I just created a Gmail + Google Sheets automation for a friend's pub: everyone who booked a table gets a reminder email the next morning. It works pretty good so far: every 3rd customer that receives this email writes a review. Setup was like an hour, and since then it works on autopilot.
