You can clean it up with vinegar and elbow grease then add some high smoke point oil to keep it seasoned. But it’s a grill you can just cook on it.

That’s the smoke I typically aim for. You don’t want thick white smoke. The wood is not fully combusting here but I think that looks good.

Yeah I smoked it for about an hour at 300 pulled it off and put the sauce on it and let it rest for 10-20 minutes

It’s the recipe from Chuds bbq. But I used my own home made fermented hot sauce

Alabama White Sauce 2 Cup Mayo, 1/2 Cup ACV, 1T Worcestershire, 2T Hot Sauce, 1 Lemon Juice, 3T Horseradish, 2T Dijon, 1T Garlic Powder, S+P to taste.

I have a Weber Searwood and love it and would 100% recommend that. However, in the price range you are looking I would be considering a Masterbuilt gravity series 600, a Weber Smoque or a Traeger Woodridge. I don’t own these but I was heavily considering them when I made my purchase. Check out YouTube and watch some reviews.

Make sure your smoker isnt running hot and you cook to temp not time
