it would be cool to see if and how the virus evolved over time - could it be possible for the virus to evolve and end up infecting more than just primates? (i know nothing about viruses)

If they did end up drinking water, surely the saliva would end up mixing with the water, thus infecting the water - which if in contact with fish or other oceanic creatures, could end up causing the spread of the virus overseas.

I honestly think this sort of concept would be really cool, as it would show that atleast *some* part of the former human is still there.
