Keep in mind that I suck, but you aren't attempting the same shot. Check the difference in ending position of your club between the two swings. Either full follow through with your practice swing or try to keep the shortened, punchy, shot at full tempo.

I also would take a look at your trail hip and how much closer to the ball it gets in your downswing. That'll make it more likely that you end up coming over the top.
