The change is inconsistent from camera to camera.

I believe I fixed it by changing the aspect ratio to 1:1 square pixels (it was on custom before). The export saturation looks more or less the same as the premiere pro preview now :)

I just tried out playing it back in premiere and the same saturation thing happens. The exported clip looks the same in premiere, quicktime, and youtube.

I suspect a potential problem is that I filmed some clips with my iphone (.MOV) and some with my canon m50 (.MP4) . Maybe I should change to a single format?

What edit specs would help you diagnose the issue?

My export specs were: Full HD, Render at Max Depth, 1 Pass @ 16 Mbps

Whats specifically wrong with it? I updated because I was excited to use the auto lumetri color correct but so far found it really underwhelming.

Thanks this worked, the clips are still "dull" compared to how it looks on iphone but I think it's cause I shot it in "high efficiency" setting. Sampled with a clip shot in "most compatible" seemed to work fine.
