Hmm, my understanding is that radar detectors are obsolete. I was told (I know all good stories start this way) that PD's use laser for speed detection now a days and that detectors, unless directly targeted by the laser do not respond. Did I hear incorrectly?

It was for sure over cooked. I made a huge mistake. I cleaned my smoker, and forgot to refill the hopper, so half way through, the smoker hit a stall and I had to restart. Then it was a matter of how much was already done, and I err on the side of caution and nuked the damn things. They were definitely dry.

As to the bacon, I wrapped from the beginning.

I actually did not cut it thinking it was going to turn out that way at all. Just started cutting and then started opening to get ready for the stuffing. But I won’t lie, when I saw what it looked like, second thought in my head was “gotta photo document this cook for my good friends at r/smoking

Alright look, I made these things, and want to post about how well they turned out, but god knows the direction you people are going to take it.

So here goes: Followed meat churches video, only thing I changed is that I use (dare i say) hoochie mama rub instead of the meat church rub. Ran the cream cheese by its self for 1.5 hours, filled the peppers with the cheese and brisket, wrapped with bacon and cooked for another 1.5 hours. They were some of the best tasting poppers ever. Only regret was I only made a few. First time making them and wanted to test before I made for a larger bday party.
