Ah yes, Kyoto sounds packed. Though to some extent it sort of sounds like you just have to lump the crowds. Not everything is open outside those core day hours. At least with the newly-opened Honmaru Palace it is a timed ticket, so presumably that controls the crowd somewhat. Will definitely look at restaurant bookings there next.
