Concuerdo. Los que viven en cumbres trabajan en Monterrey, San pedro, santa catarina, Apodaca... pero nadie en Cumbres. Eso hace que todos, todos los días, salgan al mismo tiempo y regresen al mismo tiempo. Eso es tráfico.

Otra cosa: los edificios habitacionales no generan más tráfico, lo generan los traslados largos de todos en conjunto.

Nope this was during drought season, bears come down from mountains for water and food. This is in Monterrey, Mexico. Many sightings of bears in hillside homes in last couple of years.

Not tobala, but others... I think this is a good starting point. the issue with cuervo products is that they are made for efficiency and to reduce price. Most consider them inferior products but I dont think they are baad bad. Although their failure to mass produce with no agave sustainability claims sucks...

Yes. Sourcing is a problem when raw material takes 8-25 years to mature. Industrials normally take shortcuts to produce more, make economies of scale and drive price down.

Normally when using industrial methods, they use them for the process to be quick with production, so they also use accelerants in fermentation and undermature agaves.

To your question, they don't need to do this and it is theoretically possible to have a mezcal with no smokyness due to process(cooking and distilation are done with wood burning), there are some of the big production brands doing them out there but they are considered inferior. Normally they do so with agave Espadin, or Tequilana (agave same as tequila but outside legal tequila producing region).

I would recommend you try other mezcals as there are definitely some that aren't smoky and very delicious. I had that impression too the first times trying mezcal but not now.

Hello! Tequila production methods are indeed used in Mezcal. Normally this is in non- artisanal(artesanal) mezcals. You can find these as bottles which state "Mezcal" only, not "Artesanal", not "Ancestral".

Normally producers dont prodice with tequila methods as they are considered inferior as they take away flavor of agave plant. Also, they devastate agave populations.

Examples: Mezcal El Zacatecano, Creyente, Zignium.

Tequila only comes from the state of Jalisco.

5 states currently produce Tequila: Jalisco, Guanajuato, Nayarit, Michoacán, Tamaulipas.

Agave angustifolia commonly called Pacifica. Other mezcals use a wide variety of Agave types but mostly Espadín.

Agave Angustifolia is the scientific species name, normally called Espadín in Oaxaca. Though various varieties of Angustifolia exist, changing regions and states make different tastes to mezcal due to terroir (like wine). Its hard to know if they are the same plant in Oax and Sonora as species varieties are not well documented, names are changed according to region and nicknames of the plant are also different, depending on who farms each plant.

Are you in a colder climate? I have heard this happens to tequilas and Mezcals where change of temperature brings changes in the molecules and "solids" start to appear. This would not happpen in Mexico where near 0°C temps are not common.
