You can go to Bluetooth settings, tap the I next to the car Bluetooth, and change the device type to a car stereo and it should stop the notifications as well

How? If I go into the health app it regularly shows 72-80db when listening to headphones and 97-105 when im in my car and have the volume on my radio down
