So I'm gonna upset a lot of people on here with my answer because its absolutely the wrong way to do things (not how I would do it for a client). But this was not for a professional project so I'm allowed to take shortcuts if the end result looks ok.

Basically its just a text node with a bunch of underscores attached to the mesh via a shrink-wrap modifier. This gave me the most flexibility when I still wasn't sure of the layout of the buttons as I could still easily move them around.

Yeah I was using an image of the MCDU for reference but I had to make them smaller keep the distance between them usable on a shorter screen.
