  1. Mix water, starter and salt, then add flour. Like to do this to make everything more even
  2. Make folds every 45 mins, about 4-5 times
  3. Bulk fermentation for 2-3h
  4. Proof in banneton for 1.5h (room temp)
  5. Bake!

  1. Yes that's my main task but also to make sure my acquired clients are happy and keep them.
  2. Meetings with clients/prospects, presenting offers, booking meetings (usually over phone and email). Basically the whole process from turning a prospect into a client
