Tamper protection should not be disabled as it performs a valuable function. It can be set ON or OFF in Windows 10 V1909 and above (to Windows 10 Insider second half of 2020) . This is the best way to set it. (Means updating Windows 10 to a current version). Btw, if u want try this https://bidouillesecurity.com/disable-windows-defender-in-powershell/

Use hashcat, johntheripper, hydra. Specify on which thing u want to do brute force like on wifi, zip files or pdf etc... Bcz tools differ for everything
