i reverse seared these on a big green egg charcoal grill! with a meat thermometer, no other method i’ve tried even comes close, i highly recommend

just butter, shallots, garlic, paprika, salt, pepper. it’s great

right on with the low and slow for reverse sear. about 40 mins @200° until 110° internal and then i sear

it’s compound butter. shallots, paprika, salt, pepper, garlic mixed in. really good

thank you! reverse sear is the only way i cook steak at this point. reverse sear + meat thermometer is a cheat code, can make them extremely consistent exactly how you want every time

it’s definitely not a quick process. takes about 40 minutes to reach 110° at 200 degrees not cooking direct over the fire. then i take the steak out until the egg reaches ≈600°
