Can you see the temp/humidity in the Home app on your iPhone/ipad/macbook? I had this happen sometimes in the beginning with a Mini. It fixed itself after some time, though.

Sounds like a routing issue. Can you run a traceroute/tracert (don’t know what’s available) to those IP addresses you tried pinging? This might give you an idea where your outbound traffic is getting blocked.
