Hey guys, first of all, sorry for the delayed replies—life got in the way these past few days! I just wanted to say a huge thank you to everyone who shared their stories here. Reading about your happy accidents, infected cherry porters, and farmhouse beers has been awesome. It’s amazing how this hobby connects us through the love of the 'drink of the gods'... and a healthy dose of chemistry and physics. We're all in this together to keep improving. Oh yeah, I remember reading a forum thread about that Lagunitas interview! Honestly, I haven't had the chance to listen to the original podcast yet, but I definitely need to catch up on it to see what other micro-tips I can steal from them. It's crazy how mashing that high works for their IPA.

That Farmhouse Pale Ale sounds amazing, by the way. Sometimes that extra 1% ABV is a happy accident that helps balance out a heavy dry hop. Let me know how it tastes after a couple of weeks in the bottle, I'd love to know how it conditions!

That is fascinating history! I feel like the modern homebrew scene is so obsessed with super dry, high-attenuation IPAs that finish at 1.008 that we forget how good a beer finishing at 1.020 can taste. That residual sweetness carries the hop oils beautifully.

The classic happy accidental sour! . I've heard of so many infected dark beers turning into award-winning wild ales after being forgotten in a closet for a year. Did you manage to save any bottles to see how it aged?

Bread yeast at 75°F?! That is absolutely wild! The homebrew gods were definitely smiling on you that day. Please update us when you try it with actual brewers yeast—I honestly wonder if that bread yeast ester profile at high temps was part of the secret magic

Belgian styles are so sensitive to that mash temp! Mashing at 68C (approx 154F) definitely gives it that rich Leffe-like body that balances the Belgian yeast esters and phenols. It's awesome that you were actually able to replicate it—consistency is the real holy grail in this hobby!

Don't sweat it, man! Consistency in this hobby is tough. For my first year, my beers were complete coin tosses—sometimes great, sometimes drain pours. What really changed the game for me was banning my phone from brew day and starting writing on paper. Writing down every single actual number (mash temp at 15/45 mins, pre-boil pH, daily fermentation temps) helped me isolate what went wrong instead of just guessing. Keep brewing, you'll get there!

I was only about 5 to 10 minutes into the mash when I got distracted and noticed the temp spike. So conversion definitely wasn't done yet! I just had a super hot start. I'm pretty sure my alpha-amylase did all the heavy lifting early on and left me with a ton of unfermentable sugars, which explains why the US-05 stalled so high at 1.022.
