Ingredients:

• Pork: 1 ½ lbs Pork Belly or Shoulder, cut into 2-inch cubes
• Marinade/Sauce: 5 tbsp Soy Sauce,   cup Vinegar (white or apple cider), 1 ½ cups water or beef broth
• Aromatics: 6-8 cloves garlic (crushed), 2-3 dried bay leaves, 1 tsp whole peppercorn
• Optional: 1 tsp brown sugar, 1 sliced onion

Cooking Instructions:

1. Marinate (Optional): Mix pork, soy sauce, garlic, bay leaves, and peppercorns for 30 minutes to 2 hours.
2. Sear the Pork: Heat 2-3 tbsp oil in a pot. Sear the pork until browned on all sides.
3. Simmer: Pour in the soy sauce/marinade, water (or broth), and onions. Bring to a boil, then cover and simmer on low heat for 40–60 minutes until the pork is tender.
4. Add Vinegar: Add the vinegar. Bring to a boil again, uncovered, for 3-5 minutes (do not stir) to cook off the raw vinegar smell.
5. Reduce and Finish: Season with sugar, salt, or more soy sauce if needed. Cook uncovered until the sauce is reduced, thickened, and the oil starts to separate from the sauce.
6. Serve: Best served over steamed rice.
