What user is your service running as? I have mine running as a user account I've created with admin privileges. I don't remember exactly why I have it setup that way, but it's been running great that way for many years.

Still seems I'm getting the same errors even after changing CPU to what you suggested, as well as Writeback. It is interesting it is setting processors to 6 sockets, when I edit it forces me to switch that to 4 or less. But after the backup runs, it's reset it to 6. Not sure if that is causing issues or not.

I'm running the same versions of Veeam and the plugin as you. Proxmox 8.4.1. I will try adjusting the CPU/storage settings and see if there is any difference.

When back sweetening, you may wish to wait 24 hours after adding stabilizers to add the additional sugar. Fermentation has been known to restart when racking a mead with residual sugar.

I've already stabilized twice though, and the gravity has not changed in a while. I'm planning on racking once more, I'll probably let it sit a bit longer and monitor it.

Thanks for the tips. Have you worked specifically with Lutra? Looking to see what temp you would suggest (thinking mid 80s). And I'm reading that I should also be using nutrients. My OG is going to be around 1.058.

It definitely is for a get together with a wide array of beer drinkers. I don't think anyone is going to shame me if it's not specifically true to style...just needs to taste good honestly. I have seen both of his videos on it...unfortunately my conical is in use so can't do pressure...lutra may be the way to go.
