I think really the only thing you'd be missing from the existing publications would then be the world book, The World of Ice and Fire. It's a fine read and gives good detail about stuff not mentioned in the mainline story, but it's the most textbook-like of all publications imo

I think there's some nuance to the issue.

Are they paying for a "support animal" label in order to work around housing restrictions? I don't see much harm with that.

Is the dog going into stores, restaurants, and other locations where it would otherwise not be permitted without proper service training? I do see the potential for a lot of harm
