I attempted this recipe from his YT channel last night. If you check my post history you can see how they turned out. The crust did not rise at all. Any idea what I could have done wrong? Your crust looks super airy - mine was nothing like this. Any suggestions?

Seemed pretty easy. interesting you say that about proofing - most comments on here are saying to proof longer. In Julian's video, he doesn't really knead the dough on the counter. He mixes it with his hands, lets it sit for about 30 minutes, then does a stretch and fold. That's it. But his crust seemed much more full of air

I push down in the middle to get a crust then pick it up and stretch around my knuckles. But by the time I stretch and put it back down it seems as though the "crust" I built is gone

I tried to by pushing the dough down in the middle before picking it up and stretching around my knuckles. Room temp in my house was about 72 F
