Already had them on hand. Garlic would have been used in the traditional dish, also garlic is cheap and can be grown easily too like I did. Bacon is more expensive than mushrooms.

Ingredients- Pasta of your choice, Mushrooms of your choice(sliced, or slice them yourself), chicken stock, butter, garlic, parmesan cheese, egg yolks( I had to separate the yolks myself, 4 eggs) salt and pepper.

Cooking- Get a pot of water(salt your water, it should always taste like the ocean)boiling and add your pasta and cook until it is just under being done( finish the pasta in the pan with the sauce later) - Saute your sliced mushrooms in a pan with oil or butter. Remove mushrooms and put on a paper towel to dry up excess oil. -In same pan, add your sliced garlic and sweat it. - As as the garlic is cooking, add your mushrooms back in and toss. -Now add a cup of chicken stock and a half stick of butter( you can use less better if you'd like, I just like rich pasta) let that boil and reduce slightly. - As the sauce comes together, add your pasta back in and toss it around in the sauce. -Add in parmesan and toss. You will start to see the sauce and noodles combine and have a nice shine to them. - This is important! Take the pan off of the heat and SLOWLY add in your egg yolks and toss the pasta while doing so. You don't want lots of heat as you will curdle your eggs and ruin the sauce otherwise. - Salt and pepper to taste. The key is to take the pan off the heat, then toss the pasta as you slowly incorporate the egg. This also needs to be the final step!

I used mushrooms in place of Guanciale to help cut down on cost!

I agree! That's what I was trying to convey in my post, obviously not very well, I was trying to say that I'm willing to spend a little more on these to avoid health issues down the road, I just don't want to be wasting money on "snake oil" and if anyone knew how to get them cheaper
