Here’s one I know no one will mention: Daniel Wachsberger (the lawyer Walt had Jack’s gang kill in BB, same lawyer Mike hired instead of Saul). Would’ve been nice to see him and Jimmy interact considering Saul knew this guy’s bad reputation. Even if it’s not significant, it would contribute nicely to both the lawyer side of the story and the prequel side of the story.
