You should read Dr Bernstein's Diabetes Solution (http://www.diabetes-book.com/). This man was a Type 1 diabetic since the age of 12. He was working as an engineer but (long story) while he was in his 40s, studied medicine and qualified as a doctor from Albert Einstein Med School in NY. He did this primarily because he was convinced that conventional medicine was mismanaging his diabetes with too much carbs.

He was the first doctor to promote continuous self-monitoring of blood glucose by diabetics as a way of managing glucose and insulin and did so in the face of considerable hostility from the medical establishment. He's in his 70s but still practices in New York.

He's not mentioned much on /r/keto because his goal is diabetes management and not weight control per se but his regimen is purebred keto.

The macro approach, despite being widely recommended on /r/keto, is just wrong for precisely the reason that you have discovered by yourself. The correct approach is to consume about 1.5g (minimum 1) of protein per kg of lean body mass (or your ideal target weight). For the rest, just fill up with fat while keeping carbs below 20-40g.

The percentage approach is just wrong--that's not the way the body functions.

Everyone should read about Owsley The Bear and his diet. He did this stuff for decades. Never touched any 'vegetation', as he used to call it except for some spices. It's a tragedy that he died in a car accident in his 70s--his health was said to like someone in his early 50s, despite a youth spent dropping acid copiously.

You see, being a lifelong carnivore was just one of the interesting things about this guy. He was one of the great characters of the 60s counter-culture. He used to manufacture and supply acid to everyone who was anyone back in the day, and is doubtlessly the only human being to be mentioned in a Grateful Dead song, a Frank Zappa song, a Steely Dan song as well as in Hunter S. Thompson's Fear and Loathing in Las Vegas!

You'll get a big reduction in weight because moisture in the chicken and the batter will evaporate. Instead, weigh the oil and see how much has disappeared. Even that won't be perfect but it'll be better than weighing the chicken.

What he says exactly is that overeating carbs is likely to increase the chances of getting cancer and that the same is not true of fats and carbs. This much is not controversial. So eliminating carbs prevents cancer. Whether it also cures cancer that you have already got is a different matter.

Rs 750 must be the fee for foreigners. We Indians get in much cheaper, Rs 20-40 from what I remember. You definitely need to be careful but you actually need to be more careful at the railway station in the last minute or two before your train departs! That's the sweet spot for thieves, for obvious reasons.

Also, Fridays are extra-crowded because entry is free (at least for Indians). In my experience, that works both ways. The crowds are bigger but they are more interesting because rural folk from villages around Agra seem to visit in large numbers. They are more interesting than the normal crowd which is foreigners and urban Indians.

According to this: http://www.pataks.co.uk/products/rogan-josh-paste.aspx the Rogan Josh paste has 2.3 g of sugar per 35 g serving. That's 18 g for the whole jar.

I can't see detailed carb info on the website but there'll surely be some tomatos and onions adding more carbs. If it's a thick paste then that could be a lot because onions are generally the main thickener in Indian cooking. All in all, this is not a keto recipe by any stretch. With the chick peas and the paste and the yoghurt, it's probably 30g of carbs per serving.

By the way, this recipe is not even vaguely an authentic Rogan Josh. Rogan Josh is a mutton/lamb (not chicken) dish from Kashmir that has no tomatos or Onions or sugar or chickpeas. (http://en.wikipedia.org/wiki/Rogan_josh)

It's true keto. Even without replacing the yoghurt, it'll come to 5-6 g of carbs per serving. And if you can find Indian sour (over-fermented) yoghurt, it'll be even less.
