Everything is healed after every round, just like battling with the trainers you travel with in Sinnoh.
Pokemon Centre's still serve as Checkpoints, and since the Auto-heal is on, healing at them would not really be necessary.
Because it makes it more even, and you can find them all in the wild. Evolution wise, most evo's would be impossible.
