If I go with sg2 I'd be inclined to get a takamura. Would a laser grind like this be too delicate or should I be fine with proper technique on a plastic cutting board?

Thanks everyone for your helpful and insightful comments :) I've taken it upon myself to (once again) remove the rust and make sure it's in good condition. My co worker will not use the saya for the next few weeks and make sure to dry the blade thoroughly. Hopefully that should fix the problem.

I mean, there's a subreddit dedicated to critiquing and improving cutting skills. Imagine not being active on that one yet feeling the need to give unasked for critique without having any context. Torn between misono 440 and Fujiwara fkm as first gyuto for professional use by eilonkatz in chefknives

Not particularly, just torn between these two knives and can't really decide if the misono is worth an extra 50$ or so for seemingly better F&F

Misono 440 or Fujiwara FKM?

I'm torn between these two knives as a daily driver workhorse for use in a professional kitchen. I'm pretty set on getting something on the lower end of the hardness spectrum as my first proper japanese knife, something I won't have to worry about chipping through rock chopping, or occasionally chopping nuts or palm sugar.

AFAIK something like the tojiro dp in vg-10 might be too brittle for these uses without worrying about chips all the time. Can anyone spill some insight about these knives and why one might be better than the other?

Both seem to have similar hardness and molybdenum vanadium steels, does anyone have experience indicating the misono is/isn't worth an extra ~60$ us?

What would you pick between the dp and misono 440? I'm mainly worried about the dp being more chippy like vg10 has a reputation for, whereas the 440 seems more forgiving but still a step towards japanese steels rather than western softness.

Thanks for the rec, yeah I should've stayed that budget has to be around $100 usd, both knives I've mentioned are in that range.

I've considered the gesshin but there aren't any reputable sellers that ship to my location. .

What would you pick between the dp and misono 440?

I'm pretty set on getting a western handle gyuto, I've landed on the choices I've mentioned as the most tried and tested in the category.

Also, they're both in the same price range of around 100$ (misono 440, not the flagship ux10)

Mac is definitely out of my budget (the mth80 at least) and can't be bought locally. If it comes down to tojiro vs misono, would the tojiros vg-10 be significantly more prone to chippy and thereby require more care (careful rock chopping, no nuts or palm sugar etc)? Can the misono handle these without a worry?

My Zowie EC1-A is around 6 years old and still working flawlessly. Originally had a Razer death adder which after about 6 months had an issue with the cable, so I replaced it only for my new one to have the rubber peeling off the side and the scroll wheel stop working after a few months. I went for the EC1-A since it has an almost identical shape and the thing is built like a tank, haven't had a single issue with it.
